Oxalates are simple molecules found in the leaves of many plants. For some susceptible people, when excessive amounts of oxalates are ingested, the oxalates bind with calcium in the blood and cause both damaging inflammation and precipitation in the form of kidney stones. 

Again, for susceptible people, lowering the oxalate intake in the diet is a way to prevent stone formation, reduce systemic inflammation and, in general, achieve better health.   The dilemma, however, is that a low-oxalate diet can lead to the avoidance of otherwise very beneficial foods, such as greens.   That is why we developed our Low-Oxalate Greens Powder. 

After researching the oxalate content of various greens, three emerged as the most tasty and nutritious while significantly lower in oxalates than others.   Our locally sourced, organic lacinato kale, collard greens and mustard leaves will give you the health benefits from the regular consumption of green vegetables while reducing your oxalate exposure.

Enjoy as you would our other green powders. Our favorite way to use our Low-Oxalate Greens Powder is folded into scrambled eggs or sprinkled liberally over soft-cooked eggs.

Inside this jar are approximately 50 servings! One teaspoon equals an average-size serving of the fresh vegetable.

Oxalate analysis (according to testing done at the University of Wyoming):

Soluble oxalate: 47.9 mg oxalate/100 g  (3.9 mg oxalate per Tablespoon [8.1 grams]

Total oxalate: 950 mg oxalate/100 g   (77.0 mg oxalate per Tablespoon [8.1 grams]

From Dr. Michael Liebman, professor of Human Nutrition at the University of Wyoming: 

"Oxalate in foods can be divided into that which is water soluble and that which is insoluble in water. Total oxalate includes both soluble and insoluble oxalate.  There is quite a lot of evidence that soluble oxalate is better absorbed in the gastrointestinal tract than is insoluble oxalate, so a person who is sensitive to oxalates should be more concerned about the soluble oxalate (the vast majority of insoluble oxalate is probably not absorbed so is not an issue).  For this particular product, only a relatively small percentage of the total oxalate is soluble, so that is a positive."

Burdock root has always been recommended to me for my various health issues but I have never been able to incorporate it into my diet until now! This is my favorite of all the powders I bought. I use it heavily on pretty much anything I am eating because it is so mild and blends in with anything (unlike the beet or sea vegetables which I love but find they overpower my food)
